Recipes for a classic Chakma lunch platter




A typical Chakma luncheon is simple but nutritious. Traditionally, from blanched boiled vegetable dishes to herbed less-oily fish, and meat served with a plate of jhum cultivated steamed rice, the food choice of indigenous people of Chittagong Hill Tracts changes every season. We have more than a hundred varieties of seasonal vegetables and fruits that grow around the year all over the hills. 


From sweet fruits to sour veggies and bitter herbs to spicy chillies, all of the distinctive flavours of the different ingredients are found on our lunch platter.


The reason behind having a mixed-plate lunch is that it goes with our appetite genetically. The common practice is to consume sour, sweet, bitter, and hot but less spicy, or sometimes raw greens altogether to get every possible nutrition through our regular food intake.


Traditionally, we call these food 'medicines to our body' to make our immunity stronger.

From the steaming hot kalai ruti of our very own Chapai Nawabganj to Italy's beloved focaccia—every culture has its iconic bread. When it comes to ranking the best of the best, one bread has claimed the throne, and that is none other than butter garlic naan.

According to TasteAtlas's March 2025 rankings, this naan variant has officially been crowned the world's best bread, beating global favourites like bagels, Bolani, and pita. As naan has long been our favourite too, this acknowledgement feels good.

But what makes this classic so irresistible?

Bread has a language of its own — unspoken yet understood across continents, cultures, and generations. It is, in its simplest form, flour, water, and time. And yet, within that basic trinity, an endless version of it emerges, shaped by history, geography, and the hands that knead it.

Naan's place at the table is undeniable. Plain butter naan, butter garlic naan, keema naan, or nan-e-Barbari — we all love them. It's the kind of bread that does not just accompany a meal, it enhances it.

Walk into any deshi restaurant, from the time-worn eateries of Puran Dhaka to the modern upscale diners in Gulshan, and you will never miss finding a hot basket of garlic naan served alongside mouth-watering curries, kebabs, and tandoori treats.

The soft yet slightly crispy, buttery yet airy version of bread carries the aroma of freshly minced garlic and the warmth of ghee or butter in every bite. Traditionally, it is made using flour, water, yeast, salt, sugar, and yoghurt. Once the dough is prepped and ready to rise, it is baked in a tandoor (clay oven), giving it that signature charred, smoky flavour that we all love.

A final brush of butter or ghee, topped with freshly chopped garlic, transforms it into a masterpiece. This simple yet exquisite combination has helped garlic naan become an international favourite, making its way from the heart of the subcontinent to dinner tables worldwide.

So, as the world officially declares garlic naan the best bread, we in this subcontinent simply smile. Because we have known it all along!

PANCHADAL KHICHURI

 

PANCHADAL KHICHURI



Ingredients

  • 1 cup rice
  • 2 tbsp split Bengal gram (chickpea)
  • 2 tbsp skinned green gram or yellow moong dal
  • 2 tbsp split green gram or green moong dal
  • 2 tbsp pigeon pea or arhar dal
  • 2 tbsp pink lentil or masoor dal
  • ½ cup finely chopped onion
  • ½ cup potatoes, cut into cubes
  • ½ cup capsicum, cut into cubes
  • ½ cup tomatoes, cut into cube
  • ½ tsp garlic paste
  • 1-2 green chillies
  • 2 tbsp oil
  • 1 tbsp ghee
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 2 cloves
  • 3 dry red chillies
  • 2 bay leaves
  • A pinch of asafoetida
  • ½ tsp turmeric powder
  • 1 tsp red
  • chilli powder
  • ½ tsp coriander powder
  • ¼ tsp garam masala powder
  • Salt to taste
  • 4-5 cup water
  • Chopped coriander leaves

Method

Wash the chickpeas and soak in water for 2 hours. Combine rice and all types of dal except chickpeas. Wash them properly. Soak using enough water for 30 minutes. After 30 minutes drain the water and keep it aside. Heat the ghee and oil in a pan. Add the mustard seeds and cumin seeds when oil is medium hot. When seeds start to splutter add bay leaves, dry red chillies and cloves. Add onions, sauté till the onions are transparent. Add garlic paste and sauté till the raw aroma goes away. Add potatoes and capsicum, sauté for 2 minutes. Add tomatoes and mix well. Add all the spices and mix well. Add drained rice and the dals. Mix well. Add 4-5 cups of water. Add salt and green chillies. Cover and cook till done. Garnish the Panchadal Khichuri with fried onion and coriander leaves. Serve hot with a dollop of ghee.

পুর ভরা বেগুনির রেসিপি



মূল উপকরণ: লম্বা বেগুন। বেগুনগুলো স্লাইস করে একটু লবণ ছিটিয়ে দিন। বেগুনগুলো নরম হবে, আকার দিতে সুবিধা হবে।

পুরের উপকরণ: মুরগির কিমা সিকি কাপ, পেঁয়াজপাতা মিহি কুচি সিকি কাপ, বাঁধাকপি মিহি কুচি ২ টেবিল চামচ, গোলমরিচের গুঁড়া সিকি চা-চামচ, সয়া সস ১ চা-চামচ, কাঁচা মরিচ মিহি কুচি পছন্দমতো।


মিশ্রণের উপকরণ: বেসন আধা কাপ, চালের গুঁড়া ৩ টেবিল চামচ, লাল মরিচগুঁড়া আধা চা-চামচ, রসুনবাটা আধা চা-চামচ, ধনেগুঁড়া সামান্য, বেকিং পাউডার আধা চা-চামচ, লবণ সামান্য, তেল।

প্রণালি: পুরের সব উপকরণ ভালো করে মেখে নিন। এবার লম্বা বেগুনের স্লাইসের ওপর পাতলা করে মাখা কিমা বিছিয়ে দিন এবং এক পাশ থেকে মুড়ে রোলের মতো করে নিন। এভাবে সব কটি তৈরি করে নিন। এরপর মিশ্রণের সব উপকরণ একসঙ্গে মিশিয়ে নিন। বেগুনের রোলগুলো মিশ্রণে ডুবিয়ে চুলায় ডুবো তেলে ভেজে নিন।
